HEALTHY FAVE - CAULIFLOWER PIZZA
This is one of my favorites to make! The possibilities are endless with the topping choices! I think the one thing I have struggled with with making this is how to get the crust hard enough. Well after some trial and error I think I have made it work and taste delicious!
*Preheat oven to 450 degrees
Recipe for CAULIFLOWER CRUST:
half of a medium sized cauliflower
1/2 cup parmesan cheese
1/2 tsp oregano
1/2 basil leaves
1 tsp italian seasoning
1 tsp garlic powder or fresh garlic
3/4 cup mozzerella
1 egg
1 tsp of red pepper flakes (optional)
Wash and dry the half of cauliflower... Cut off the longer stems as you mostly just need the florets. Use a food processor to pulse your chunks of cauliflower for about 20 seconds until the cauliflower looks like snow. You will probably need to do this more than once, as all of the cauliflower may not fit in your processor. Place all your "snow" in microwave safe bowl and cover. Microwave for 4 minutes, and let sit for another 5. The cauliflower will be extremely hot! Then, I take a dishtowel and put your cauliflower inside. Wrap it up and ring it out over the sink until you get as much water out as you can! This is important as the less water, the crunchier your crust will be! Then, add in the rest of the ingredients with the egg last, stirring well.
Prepare your baking sheet by putting parchment paper down and spraying with non-stick cooking spray. Use your hands to place your cauliflower dough on the sheet and roll/mash into a circular crust. Pat it down thoroughly so it stays together.

BAKE for 10 minutes or until crust starts to turn golden brown.
Then the fun begins!! Add your toppings. For this one I started with mariner sauce, then reduced fat mozzarella cheese. Then I added cooker chicken, mushrooms, artichokes, black olives, green peppers, and spinach! I love piling on those veggies! There are so many different combinations for toppings that work very well. After you finish your masterpiece, put it back in the hot oven for 5-8 minutes or until your cheese gets bubbly and golden! Allow it to cool for a few minutes and dig into your bread free pizza. Cheers!
