SPICY HUMMUS CHICKEN BREASTS


I LOVE LOVE this recipe and I know you will too. It is so easy and delicious. This is one of my favorites because you would never think that coating a chicken breast with hummus and some spices would taste so good.. Take my word and try it. The reason I called for 4 is because I made dinner and lunch for my boyfriend and me. :-)

PREP TIME: 5-10 minutes TOTAL COOK TIME: 45 minutes

WHAT I USE:

4 defrosted boneless, skinless chicken breasts

1 1/2 cups of spicy hummus

1/2 tsp paprika

1 1/2 tsp garlic

WHAT I DID:

I would recommend pulling your chicken out of the freezer the night before, or use freshly bought chicken to avoid spending time defrosting it before you start prepping. Preheat oven to 375 degrees. Get a 9x13 pan, cover the bottom with aluminum foil, and spray with non-stick cooking spray. Mix hummus, paprika, and garlic in a small bowl. Use a spatula to cover the raw chicken from top to bottom. You will probably have to touch the raw chicken. I recommend putting it in your hand, coating the bottom and putting in the pan, then coat the top.

Cook for 30 minutes or until cooked through and serve with whatever sides you like. My sides in the top picture are spaghetti squash with parmesan and baked broccoli. Cheers!
