CLEAN AVOCADO COOKIES
Okay, I know what you're thinking. These don't have an awesome appearance... but if you want a dessert with no flour or butter than it is pretty awesome. This is a great sweet treat to get your fix if you are dieting or just looking for a healthy alternative for a cookie.
What got me thinking about making these was that I had a almost over ripe avocado sitting in my kitchen that needed to be used. I am happy with how these turned out... I would describe them to be more like a brownie than a cookie, but in cookie form they are a little easier to share and less messy. I hope you enjoy!
WHAT I USED:
1/2 cup Stevia or sugar subsititute
1/2 cup cocoa powder
1 ripe avocado (not brown)
1 egg
1/2 tsp baking soda
1 cup dark chocolate morsels
1/2 tsp coconut oil
WHAT I DID:
1. Preheat oven to 350 degrees F.
2. Using a food processor add avocado, coconut oil and sugar.
3. Mix until smooth, then add egg.
4. Move to a medium size bowl, then add cocoa powder and baking soda.
5. Mix well and add chocolate morsels!
6. Bake for 8-10 minutes on greased baking sheet. Let cool 1 minute and enjoy!
