BANANA OAT MUFFINS
I have been making banana bread for a long time. It is like my Saturday mid-afternoon fun. I am also a big experimenter, so I have tried a lot of different variations. Having a dessert/snack that is a healthier option is a big deal to me, and I have figured out good substitutions for different not-so-healthy baking materials. The one I am sharing today is one of my favorites and it is in muffin form :) This recipe contains NO sugars or butter. Hope you enjoy!
WHAT I USED:
2 overripe bananas
1 cup oats
1/4 cup greek yogurt
2 egg whites
1/4 skim milk
1/3 cup honey
3/4 cup unsweetened applesauce
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 cups flour
2 tablespoons coconut oil
Optional: 1 cup dark chocolate chips, 1/2 cup baking caramels
Topping
1/4 cup PB fit powder
1/4 cup water
WHAT I DID:
1. Preheat oven to 375 degrees. Using my teal (hehe) Kitchen Aid Mixer, (you can hand mix too) I started with the honey and apple sauce, mixing on low speed.
2. Add bananas and mixed on low speed to mash.
3. Add coconut oil, vanilla, milk, yogurt, eggs, and oats. Mix on low speed
4. Put flour, salt, and baking soda in a separate bowl and then add to your mix about a third at a time.
5. If you'd like, fold in dark chocolate chips and caramels
6. Bake in muffin tin for 10 minutes or until dough does not stick to toothpick test. Let cool 5 minutes.
7. Mix your Peanut Butter topping and drizzle over the top of each. Enjoy!
