SKINNY PEANUT BUTTER CUPS


I can't wait for you to try these! They are so simple to make and delicious! These make for an excellent sweet tooth satisfier but a little more guilt-free. I was really never a peanut butter cup fan... I like chocolate and I LOVE peanut butter but I had a hard time with them being together.. I know weird. I am telling you, these have changed my life. I made them while I was watching NBC's The Voice, so then I wasn't just standing around waiting for them to freeze. Ha!

This recipe does need peanut butter powder, which I might add has 90% LESS FAT than regular peanut butter. It also needs coconut oil. I get both of these items from Sam's Club, but you can find them at any grocery store. Below is what I use:

I did have to perfect my recipe. The first time I tried making these, my chocolate mixture did not become liquid enough for an easy pour. There was a lot of handwork involved, so I hope this does not happen for you! Enjoy!

 

Makes 16 Skinny Peanut Butter Cups. See photo process at the bottom :)

WHAT I USED:

mini muffin tin

mini muffin baking cups

cooking spray

2 tablespoons coconut oil

2 tablespoons almond milk (room temperature)

1 cup dark chocolate chips

3/4 cup warm water

3/4 cup peanut butter powder

1/4 cup honey

1 tablespoon coconut oil

WHAT I DID:

1. Line mini muffin tins with baking cups, about 16

2. Add 2 tbsp coconut oil, almond milk, and chocolate chips into microwave safe bowl. I used my Pyrex since is has a small spout.

3. Microwave 30 seconds, stir. Microwave 20 seconds, stir and repeat until liquid.

4. Pour into each baking cup to cover the bottoms of each. Don't use all of your mixture you need to save half for the top!

5. Freeze 15 minutes

6. In a small bowl add honey and 1 tablespoon of coconut oil. Microwave 15 seconds.

7. Add warm water and PB powder to small bowl and stir until liquid. Evenly distribute on each baking cup until gone.

8. Freeze 5-10 minutes

9. Pour the rest of the chocolate mixture over each baking cup. Freeze 45 minutes to harden and enjoy!
