LIGHT PESTO SHRIMP LINGUINE


Pesto is my absolute favorite. I love anything with pesto in it. I bought a jar of pesto at the store and only used half, so now I will have to find another pesto recipe for this week. :) No complaints here!

I tried this recipe for the first time with my boyfriend and it turned out great! I like that it didn't feel so heavy after eating. It also only takes about 20 minutes to prep and cook.

WHAT YOU NEED:

2 cups skim milk

2 tablespoons coconut oil

1 tablespoon olive oil

1/2 cup parmesan

2 tablespoons all purpose flour

one box of healthy harvest all natural whole grain linguine

one bag of medium/large shrimp (tails off and usually about 50 in a bag)

pepper to taste

garlic powder to taste

red pepper flakes

WHAT I DID:

1. Boil water for pasta

2. Put 2 tablespoons coconut oil in large pan over medium heat, add flour and stir until smooth

3. Add noodles to boiling water and cook for 10 minutes or until al dente

4. Add milk to oil and flour mixture along with pepper and garlic powder to taste. Stir continuously.

5. Once noodles are done, strain and put back into pot. Add olive oil

6. Add parmesan to milk mixture and stir until thick. Then add pesto and shrimp and cook about 5 minutes.

7. Serve and enjoy!
