CILANTRO LIME CHICKEN WITH AVOCADO SALSA AND MEXICAN CORN
Well, it's been a solid amount of time since my last post. I've been doing a lot more on Instagram, it's just been easy. (Follow me: @tealkitchen) Apologies for the lack of posts in these last few months, BUT I felt this recipe absolutely needed to be posted and hopefully recreated. You'll want to marinade your chicken at least an hour prior to cooking. The longer it marinates, the better flavor you'll get.
This Mexican corn. I am telling you it was the best part of this entire meal. You MUST try the corn, and that's most of why this recipe needed to be shared.

Cook Time: 20 minutes
WHAT YOU'LL NEED:
4 boneless skinless chicken breasts
3 limes
A bunch of cilantro
2 cloves garlic
1 tsp cumin
1/4 cup olive oil
Pepper
Salt
2 bags of steamable sweet corn
1/4 teaspoon cayenne pepper
1/2 tsp Chile powder
1/4 cup pepper jack cheese
1/2 tsp salt
1/2 tsp garlic powder
1 tablespoon butter
1 tablespoon mayonnaise
2 avocados
1/3 of a jalapeño, chopped
WHAT YOU DO
CILANTRO LIME CHICKEN
Grab your food processor and put in juice from 2 limes, 1 cup cilantro, 2 cloves of garlic, 1 tsp cumin, 1 tsp salt, 1 tsp pepper, olive oil and process until cilantro is chopped. Pour it into your resealable bag and add the 4 chicken breasts. Put in fridge and marinate for at least an hour.
After the hour is up, put your chicken on a medium/high skillet and cook about 8 minutes a side. While this is happening, microwave corn for the time it says and make your avocado salsa...
AVOCADO SALSA
2 avocados, peeled and diced
1/4 cup cilantro, chopped
1 tablespoon lime juice
1 tsp salt
1 tsp pepper
1/2 tsp garlic powder
1/3 jalapeno, chopped
Mix together in a small bowl and set aside. Start your Mexican Corn.
MEXICAN CORN
Heat tablespoon of butter in skillet over medium heat. Then add mayo, cayenne pepper, chili powder, and 1/2 tsp salt. Cook for a minute and add the already steamed corn. Grill on medium heat for 5-7 minutes and put in a serving dish. Add pepper jack cheese and 2 tablespoons of lime juice. Stir & Serve.
