ONE-PAN CASHEW TURKEY LETTUCE WRAPS
These are super quick and easy! A great healthy option with some asian spice. My boyfriend and I did these together - it was great to have the help with preparing the celery, water chestnuts, and onion.
I recommend making enough for leftovers - these will be my lunch tomorrow at work! I bet they will be even better with the flavors settled in. Enjoy!
TIP: If you ever struggle with getting lettuce apart like I have, I have a great trick! Before you open it from the packaging, slam it (core facing down) on a table a couple times. Open the packaging and pull the core out! It should come out pretty easily; if not, slam it down one or two more times. This makes it super easy to grab those big pieces of lettuce!
WHAT I USED:
1 lb ground turkey
3 tablespoons reduced sodium soy sauce
2 1/2 tablespoons of hoisin sauce
2 teaspoons chili paste
3 cloves garlic
1/3 white onion, diced
olive oil
head of lettuce
1/2 cup matchstick carrots
3 stalks of celery, chopped
1 can water chestnuts
1/3 cup chopped raw cashews (I use unsalted)

WHAT I DID:
1. In large pan over medium heat throw in some olive oil and add the onion and garlic. Add salt & pepper to taste. Let simmer for 3 minutes and add your turkey. Brown and chop
2. Add celery, carrots, and water chestnuts and stir
3. Add soy sauce, hoisin sauce, and chili paste and turn on high heat for 4-5 minutes
4. Add cashews, stir, and bring to low heat. Let sit, and wash lettuce pieces.
5. Remove from heat and serve over lettuce wraps! Cheers!
